BEHIND PRODUCTION
This lot comes from smallholder farms in the Las Flores community of Santa Bárbara, an area celebrated for producing some of Honduras’ most expressive micro-lots. At elevations reaching up to 1800 meters, the cherries develop slowly, concentrating sugars and complexity. For this production, we selected a honey-processed Catuai that shows exceptional clarity and sweetness. During roasting, its structure responds best to a controlled, gradual heat application. This allows the molasses-like sweetness and dried strawberry notes to surface without losing the fresh cherry acidity. We maintain a balanced development to preserve its delicate body, resulting in a clean, elegant cup that stands out both as a filter brew and a sweet, lightly bright espresso.
LOCATION
Las Flores is part of the Santa Bárbara region in western Honduras, near the shores of Lake Yojoa and within the mountain range surrounding the Santa Bárbara National Park. The region sits along fertile volcanic soils enriched over centuries and benefits from a distinctive microclimate created by dense forests, shifting mountain winds, and high humidity. Day–night temperature swings remain pronounced at these elevations, allowing cherries to ripen more gradually and evenly. Santa Bárbara is known for pioneering specialty microlots in Honduras, and Las Flores in particular has become a hub for small producers who cultivate Catuai and other varieties on steep terrain, often using eco-friendly, small-scale post-harvest methods. The result is coffees that are consistently sweet, structured, and vibrant.

Honduras Las Flores arrived to our roastery via EL CAFÉ, a company established in 2000 by Vasileios G. Anastasopoulos that is solely concerned in the coffee producing countries with discovering new coffee varieties on special farms.

Since then they supplie most of the largest coffee producing companies in Greece, by remaining as a dedicated green coffee import and trading company.

In the honey process, the skin of the cherry is removed but the mucilage — the sticky, sugar-dense layer — remains intact on the parchment. The coffee is then dried slowly on raised beds, allowing the fruit sugars to bind to the bean. This method bridges the clarity of washed coffees and the sweetness of naturals. For this lot, controlled drying in thin layers ensured an even fermentation and preserved the characteristic flavors of cherry, dried strawberry, and caramel. Honey processing in Santa Bárbara is often performed manually by smallholders, giving each lot a distinct artisanal character. The technique contributes to the silky mouthfeel and molasses-driven finish found in this coffee.
